Valentine Raspberry Cookies (recipe)

Nothing says love like homemade cookies with jam. These valentine raspberry cookies bring together butter, sugar and tart raspberry flavors in a stunning sandwich. They have the classic look of linzer cookies, with a modern touch. This recipe is nut-free and streamlines the steps, so it’s fast and easy to make.

Sugar, butter, flour and eggs combine with orange zest and spices for a crumbly dough. Sparkling crystallized sugar and white chocolate add a gleaming finish.

This recipe is adapted from Nick Mackride’s Linzer Cookies on the food blog The Scran Line. The changes allow a few personal preferences including:

  • A lighter touch of spice, to feature the flavors of butter and jam
  • More liquid to form a dough (the original recipe stayed crumbly for me)
  • Enhanced berry flavor with the addition of fruit gelatin
  • Pink sugar crystals and white chocolate for a pop of color

Raspberry flavor without raspberry jam

If you have jam, but it isn’t red or raspberry flavored, no problem! Here’s a hack that brightens the color and taste. Add a teaspoon or two of powdered jello to any fruit spread you have. A little jello dramatically punched up the bland preserves from my cupboard.

Cookie cutter options

Besides jam, you’ll need cookie cutters–one small and one large. Linzer cookies are traditionally circular, and sport round hole in the top to show off the fruit filling. If you have a heart-shaped cookie cutter, you have the perfect shape for Valentine’s Day. Either use a tiny heart for the little cut-out, or a full-size heart shaped cutter for the entire cookie sandwich. I have a weakness for cookie cutters, and I loved using my scalloped edge circles for the main cookie and tiny heart cut-outs for these valentine raspberry cookies.

Instructions
Make the filling
  1. Combine the gelatin and jam in a microwave-safe cup or bowl.
  2. Heat the jam mixture in the microwave for 15-20 seconds. Stir to dissolve the gelatin. If needed, repeat heating and stirring as needed until the texture is no longer grainy.
  3. For each pair, spread a dab of filling on the whole cookie and top with the cut-out cookie.
Decorate
  1. In a cup or small bowl, melt the white chocolate using a double boiler or microwave.
  2. In another small bowl or ramekin, place the crystallized sugar.
  3. Dip a filled cookie partway into the melted chocolate, then immediately into the crystallized sugar. Alternatively, drizzle the melted chocolate across the cookie using a skewer or piping bag and small tip.
  4. Allow to cool completely and enjoy.
