Crispy horse treats with star anise
This anise horse treats recipe yields dozens of pale golden shelf-stable treats with a licorice-like fragrance and flavor. They stay whole in your pants pocket even if you forget to take them out while riding. They remain firm and crunchy for a month in an airtight container. I can’t say if they’ll stay nice and crispy longer, because ours don’t stay uneaten that long.

  1. After grinding the oats and spices, combine them with flour and the other the dry ingredients —
  2. Grind the oats in a blender or food processor until it has a flour-like texture. Place the ground oats in a large bowl.
  3. Grind the star anise, fennel seed and flaxseed meal in the blender or food processor. Process until the spices have the same meal-like texture as the flaxseed meal.
  4. To the ground oats, add the flaxseed and spice blend, flour and salt in the large bowl. Stir together to combine.
  5. Add the honey, safflower oil and stir to combine.
  6. Add water 1/4 cup at a time until the dough holds together but is not sticky.
  7. Shape as you wish. I like to use a 1/2 teaspoon measuring spoon as a mold. Lay your shaped treats on a parchment lined cookie sheet
  8. Bake at 200-degrees for 30 minutes. Rotate the cookie sheets and repeat two more times for a total of 90 minutes.
  9. Turn off the oven and let the horse treats continue to dry and harden overnight.
  10. When cool, check that they have dried completely. Taste one (or cut one open with a knife) to check for any residual moisture or softness. if the treats are not completely dry and crisp, return to the oven for another 1/2 hour at 200-degrees.
  11. Enjoy sharing them with your equine friends. Dogs like them too.
